Lacey Anderson's vegetarian meal plans for camping can revolutionize your eating experience in the backcountry. I love the fact that she includes not only hardy and delicious main dishes but also creative appetizers and (my favorite part of any meal) dessert. Likewise, breakfasts and lunches are tasty and satisfying. I like the fact that her recipes also include fresh ingredients. She has proven experience about what lasts on multi-day adventures. Best of all, I don't have to married to the camp kitchen with these menus. They are simple to prepare and taste great. Even my husband can make these recipes. Thank you Lacey for putting this excellent meal plan together!

Just received my copy and read it straight through. It’s no-cooler recipes are a Godsend, not to mention the many common sense ideas about food packaging, nutrition, and meal planning that are included. I’ve been boating over 40 years, including conducting many expedition-length trips, and I’ve never come across such a helpful cookbook. Stocking and maintaining iced coolers over several weeks can be a major pain, and Lacey’s thoughtful and detailed recommendations eliminate that chore. If you want to cut down on both the sheer volume of cooler space and the work & worry related to hauling refrigerated food on your trips, this is the recipe book for you. Thank you Lacey!

I'm a minimalist when it comes to outdoor cooking and meal planning. I'd rather spend my time doing in the great outdoors rather than cooking. And I'd rather not have to worry about ice and food spoiling. At the same time, I don't want to sacrifice the yum! Lacey keeps all the yum. I have every offering in the no coolers line of cookbooks. You won't be disappointed. I have a teardrop and these menus save precious space and weight. I also self-support kayak and these meals are easy to pack into my boat.

I ordered this book a few weeks ago and have gone through a good chunk of the recipes. All have been very good with many that worked for my vegan family members staying with us. I've packaged some of the recipes using freeze dried ingredients for camping this fall and look forward to having such a simple and yummy menu to go off of.

What a treat! Lacey introduced me to some new products (canned cheese, huancaina sauce) and new ways to prepare. You can usually find me in the woods or on the water; and I like to eat well. In the past, eating well meant coolers, and heavy kitchen tools. This book keeps the all the flavor and ritual of fine camp dining, but lightens the load and simplifies multi-day planning. A keeper!
